This selection comes from a tight-knit group of four family farms in the high-altitude hills of Popayán, Colombia. In this region, coffee isn't just a crop—it’s the lifeblood of the community. By bringing their harvests together to a specialized central mill, these farmers are able to use advanced technology that ensures every single bean meets a world-class standard. This collaborative approach doesn't just produce better-tasting coffee; it provides these families with the resources they need to protect their land and their livelihoods for the next generation.
High-Tech Honey
To create this specific flavor profile, the team uses a specialized "Honey" process where the coffee is fermented in a controlled environment to lock in sweetness before being dried in protected solar dryers. This method is incredibly eco-friendly, as it skips the traditional washing stage to conserve water while intensifying the fruit character of the beans. The result is a cup that is remarkably clear and bright, offering a complex sweetness that highlights the very best of what Colombian "Castillo" coffee can be.
