The "Indigenous Heirloom" varieties mentioned here are unique to Ethiopia. While most of the world grows specific varieties like Bourbon or Typica, Ethiopia is the birthplace of coffee. There are thousands of wild, undocumented varieties growing in these "coffee gardens," meaning the flavor profile of Hafursa is a literal expression of the local forest that cannot be replicated anywhere else on Earth.

The Gold Standard of Yirgacheffe
The Hafursa Cooperative is a cornerstone of the Gedeo Zone, having been established in 1975, long before specialty coffee became a global phenomenon. Located in the high-altitude Gedeb district, the 800+ members of Hafursa are true "garden farmers." Rather than large plantations, these families grow coffee on tiny plots alongside bananas and fruit trees, which naturally shade the coffee and enrich the soil. As a founding member of the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), Hafursa has led the way in fair trade and organic practices, ensuring that the legendary status of their land translates into sustainable livelihoods for their community.
Elegance in the Garden
In the coffee world, Yirgacheffe is synonymous with elegance, and this "Washed" lot from Hafursa is a perfect example of why. Because the coffee grows at staggering altitudes of up to 2,300 meters, the beans develop slowly, packing them with a dense, refined sweetness. By washing the coffee and drying it on traditional raised African beds, the farmers strip away any "funk," leaving behind a cup that is remarkably crisp and transparent. It is a light, sophisticated brew that drinks almost like a fine tea, showcasing the delicate floral and citrus notes that can only be found in this specific corner of Ethiopia.
